Биохимический состав плодов кизила обыкновенного в природных популяциях Дагестана

Введение. Плоды кизила обыкновенного (Cornus mas L.) являются ценным пищевым и лекарственным сырьём. Однако их биохимический состав в зависимости от контрастных условий произрастания остаётся недостаточно изученным. Республика Дагестан, обладая выраженной высотной поясностью и разнообразием климатических зон, представляет особый интерес для оценки влияния экологических факторов на накопление биологически активных веществ в плодах дикорастущих популяций.
Цель. Определить содержание основных групп биологически активных веществ в плодах кизила из пяти природных популяций Дагестана и выявить его зависимость от экологических факторов на высотном градиенте от −2 до 1030 м над уровнем моря.
Материал и методы. Сбор плодов проводили в 2024–2025 гг. в предгорных районах Дагестана. Содержание влаги, золы, экстрактивных веществ, дубильных веществ, флавоноидов, антоцианов, органических кислот, аскорбиновой кислоты и углеводов определяли по методикам, приведенным в Государственной фармакопее Российской Федерации.
Результаты. Установлено, что содержание биологически активных веществ варьирует в широких пределах: органические кислоты – 2,1–3,1 %, витамин С – 5–12 мг/г, углеводы – 13,6–19,1 %, дубильные вещества – 1,7–4,6 %, флавоноиды – 4–10 мг/г, антоцианы – 1–5 мг/г. Содержание флавоноидов и аскорбиновой кислоты изменялось почти в 2 раза в зависимости от условий мест произрастания. Корреляционный анализ выявил положительные связи концентрации антоцианов (0,57) и органических кислот (0,69) с температурными показателями и отрицательные корреляции дубильных веществ с аскорбиновой кислотой (-0,56) и органическими кислотами (-0,60).
Заключение. При увеличении температурных показателей содержание флавоноидов и антоцианов возрастает, усиливая защитные механизмы клеток. Полученные данные свидетельствуют о высоком селекционном потенциале природных популяций кизила в Дагестане и могут быть использованы при отборе хозяйственно-ценных форм для интродукции в предгорных зонах Северного Кавказа.
